Its 1 lb. of meat uses approximately 2 feet of casings, and it can make about 115 lbs. of sausage. These casings should be soaked and flushed in water before using. If casings are salted, they acquire long lasting shelf life when stored properly. If they are Un-refrigerated, they starts emitting a strong odor in short span of time, even though they are not spoiled. You should put them back under refrigeration instantly and you will find that this odor for the most part settles.
